Its land has always been used for producing vineyards. This is due to its particular environmental conditions that are ideal for the production of high quality wine enabling the growth of grapevines in an environmentally sustainable and eco-friendly way. Indeed, the soil rich in marl and the temperate climate provide a microhabitat that improves the organoleptic qualities and the health of the farm grapes. The 17th century’s poet Francesco Redi celebrated the vineyards and the wine produced in this area in his well-known poem Bacchus in Tuscany. Since the early 1970s, the late owner Francesco Pancaro, decided to specialize in growing grape. His engagement and work have been continued by the whole family, but mostly by his son Federico. He is now engaged in updating the production techniques while keeping up the old traditions, aware that enthusiasm, love for nature and respect for the environment are the recipe to maintaining the high quality of the products. Because of this philosophy, only the grapes produced on the farm are used to make these high-quality wines produced in the historic wine-cellar, locally known as La Panchera. THE WINES SPIGALLO Denomination: Chianti DOCG We decided to name our Chianti, Spigallo, in 2011, when we changed the farm’s image and we adopted a cock pecking a sheaf of wheat as our logo. We took this decision because we found this picture in our villa since in the past it was used as the family crest. Spigallo is made only from selected farm’s grape with a long fermentation at a controlled temperature in cements tanks and a short maturation of 6 months in the traditional tuscan big barrels of chestnut wood. It is a rich and full-bodied wine, with all of its components in perfect balance. It is characterized by an intense ruby-red colour with purple hints and by a perfume of bouquet of red roses and berries fruit (such as black currant and blueberry). The taste is rich, with an important tannic structure although featured by lively and sweet tannin. Grapes: 80% Sangiovese, 20% Merlot. Agronomists: Federico Pancaro and Stefano di Blasi GALIOFFO Denomination: Vinsanto del Chianti DOC The name Galioffo comes from the name of a close podere, in which the family of a farmer used to live during the old times of mezzadria. Our DOC Chianti Vinsanto is a unique product perfectly in line with old traditions. The experienced collectors harvest the best grapes by hand, and they leave them to dry until Christmas in a ventilated space on reed mats called graticci. Once dried the grapes are pressed and the very sweet must is put to rest in caratelli – old and small chestnut wood barrels - that allow the Vinsanto to age peacefully for at least 3 years. Sweet in taste and with dark amber color, it has an intense chestnut flour and dried fruit smell. In the mouth it is sweet, oily, with a soft incense finish. Grapes: Trebbiano and White Malvasia 90%, Sangiovese 10%. Agronomists: Federico Pancaro and Stefano di Blasi THE WINES LAMA Denomination: I.G.T. Chardonnay di Toscana As for Galioffo, the name Lama derives from the name of an old farm situated close to our property, in the age of mezzadria. This wine is made from Chardonnay, farm’s grape, with a long fermentation at a controlled temperature in inox steel tank, and a short maturation for the 40% in oak and for the 60% in inox steel. The colour is paper-white, with an extraordinary range of perfuse, mainly the scent of elder flowers. The taste is fruity with a well balanced mineral acidity. Grapes:100% Chardonnay. Agronomists: Federico Pancaro and Stefano di Blasi. SASSONE Denomination: I.G.T. Bianco di Toscana The word Sassone in Italian means big stone, so the name of this wine comes from a big rock lying in a forest next to our winery, and from the rich presence of the same marl pebbles in the vineyard, which facilitates the temperature regulation and help the vines to give the bunches all the necessary nutrients and to maintain strong minerality and fresh taste of the wine. Sassone is a young and fresh wine with lovely minerality and vibrant acidity, crystal-clear in color, made from a blend of traditional tuscan white grapes, which are hand harvested, and a long fermentation at controlled temperature in stainless stell tanks.
