Prestigious research explains the virtuous link between the mountains and vine
growing, placing latitude and height above sea level as the necessary parameters for
the location of the “perfect” vineyard. Trentino’s position, as the most northern region
of Italy, and its entirely mountainous terrain, with 80% of its surface area at an altitude
of over 600m, make it a unique environment for wine production, giving wine special
flavours and fragrances characterised by freshness and genuineness, and a close link
with the area.
The agricultural sector of Trentino is deeply influenced by the physical characteristics of
the region. The special microclimates of Lake Garda, with olive trees the furthest north
in Europe that produce excellent oil, and those of the Dolomite valleys are the unique
ingredients for wine production. With over 10,000 hectares of vineyards divided into
over 80,000 lots and a production of 1,200,000 quintals of grapes, transformed into
about 800,000 hectolitres, this region is the most important wine producing mountain
area (according to the EU classification) in Italy and Europe. This tradition has continued
for centuries, since the Trentino region, once part of the Tyrol province, was the leading
supplier of grapes to the Austro-Hungarian Empire. In this land, borderland culture has
led to high quality combinations, including Chardonnay and Müller Thurgau.
Today, over 90% of the vine-covered surface is dedicated to producing D.O.C. wines,
one of the highest percentages in Italy. Here 39% of the vineyards are located in the
lower valleys, 41% in the hills and 20% in the mountains. White grapes represent 68%
of production, red grapes the remaining 32%. One of the leading wine producers in
Trentino is Trentodoc, with its “Metodo Classico” sparkling wine of the mountains. Today, the Italian market absorbs about 90% of its production while the remaining 10%
is exported to other European and non-European countries. Still native wines, characteristic of the region, also make an important and valid contribution. The treasure
that preserves the most important and prestigious vintages is the Enoteca Provinciale
at Palazzo Roccabruna, a noble 16th century palace in the historic centre of Trento.
Here, you can take a tour to discover the characteristic wines of the region, including
Nosiola, Müller Thurgau, Marzemino, Teroldego Rotaliano and Vino Santo, all strictly
D.O.C. wines of Trentino.
Last but not least there is grappa: 3 main varieties include grappa obtained from
aromatic grapes, grappa intended for ageing and grappa obtained from mixed grape
pomace. The Istituto di Tutela della Grappa (Grappa Protection Institute) of Trentino,
recognised by its trident symbol, was established in 1960 to promote grappa and guarantee its quality. Today, it has 29 member producers out of a total of 130 in Italy; of
these, 21 are distillers and represent almost the entire production of the region. High
quality grappa is obtained from Müller Thurgau, Marzemino, Nosiola and Teroldego
Rotaliano grape pomace, using the batch bain-marie distillation method. This very
long method, originating in Trentino, requires patience and commitment. Time leads

For wine is not the fruit of chance. It is the magic concurrence of a
series of actions that follow the rhythm of the climate – and thus
time – rooted in the earth, strengthened by man’s will. Unfading,
unparalleled elements. The Cesconi family possesses the strength
of patience. And the experience of the strong. Confirmed vintners,
producing wine as far back as 1751, when wine was a balm for
the seemingly hopeless exertions of hard work. Favourable harvests, encouraging signs, letting time take its course. Interpreting
the climate – the vineyards exposed to the sun and brushed by
the wind blowing from Lake Garda that can be thought to connect
the two distant areas: the lower Sarca area to the hills above Pressano and Lavis, the breeze tamed by the Brenta Dolomites and the
Paganella – and adapting the land. Where the new generation of
the Cesconi family now work with renewed enthusiasm. Respecting our ancestors’ temperament. So, you will find the vineyards
next to the new winery, on the slope facing the Valle di Cembra,
neat and precise vine-rows embedded in the landscape protected
by the Paganella – a mountain that is the symbol of Trentino’s
multi-faceted nature making it a land suited for viticulture and
winemaking. And then – respecting the individual environmental features and the family’s carefully considered agronomic choices – the Dro vineyard rows, in the Valle dei Laghi, tempered by
the Garda Lake nearby and connected symbolically to Pressano

VINEYARD LOCATION
This wine is fruit of those vineyards on the hill of
Pressano that consistently yield the best quality
grapes. The vineyards are south-west facing and at an
altitude of 300 metres above sea level. The soils are
fairly deep with a high mineral content derived from
the high degree of bedrock fragmentation; this
bedrock originates from marine deposits dating back
to 240 million years ago.

The vines are guyot- and pergola-trained with a
density of 7,000 and 4,000 vines per hectare
respectively.
WINEMAKING
The grapes are picked and fermented separately in
large oak casks and French oak barriques where they
remain for 8 months; the final blend is assembled in
the spring following the harvest.

through the beneficial strength of the Ora, the afternoon wind
that blows from the Garda coast. Two areas, quite different in their
nature but farmed purposely to produce wines that are equally
dissimilar. The white grape varieties are planted only high on the
slopes where the land is raised above the ancestral confluence
between the Adige and Avisio rivers. While the vineyards set aside
for long-lived red wines have their vines rooted in clay, silt and sand
derived from the Garda Lake. Two viticultural contexts so dissimilar
to be unique.
In the same way, the passion for winemaking that inspires the Cesconi family is truly unique.

Concilio founded by Angelo Grigolli in 1860, Concilio began producing wine in a small village in the province of Trento, northern
Italy. Over the years the company grew in size, other local families
joined the venture. In 1990 Concilio assumed its present form as a
private company when a large group of vineyard owners became
shareholders.
The vast contrasts of terrain, microclimate, soils and altitude in this
region make it possible to plant each type of vine in conditions
ideally suited to its needs, resulting in an enviable variety of styles,
even within a particular grape variety.

which drastically limit the use of chemical fertilizers, pesticides
and other measures both in the interest of health and the environment. Vineyards are situated at altitudes varying from 200 and
800 meters on the hillsides and on side valleys in the province
of Trento.
Concilio comprises three modern wineries. Grapes are crushed
and the juice vinified in the cellars at Trento. Here the most
advanced technology is available to cater for the requirements
of individual grape varieties, such as pneumatic presses, refrigeration units and stainless steel tanks for temperature controlled
fermentation. Maturation and bottling take place in the cellars at
Volano, where the company headquarters are located. The ageing

DOC TRENTINO
The growing area corresponds to that approved for the
production of typical Trentino quality wines where Chardonnay originally from Burgundy in France - has found a second
homeland and where it has become very versatile in the styles of
wine it yields. For the production of serious wines it performs
best on south-facing hillsides in marl soils and the ideal altitude is
300 metres.


WINEMAKING
The grapes are picked and transported in small crates. The
berries are de-stemmed without being damaged and allowed to
macerate in horizontal presses for a few hours. After soft pressing
part of the juice is clarified by natural sedimentation, after which
the fermentation is activated by innoculation with selected yeasts
and is temperature controlled (15-16°C). The other part of the
juice is barrel fermented. After the blend of the two fermented
parts, the young wine is matured in stainless steel tanks on the
fine lees for several months, followed by brief bottle ageing before
release.

DESCRIPTION
Straw yellow in colour, intense and fruity on the nose with a
touch of honey and hints of vanilla, due to the ageing in
barrique. Full and developing on the palate, with a good and
elegant structure.
GOES WELL WITH
A top quality wine which is excellent with fish, and white meats.
Serve lightly chilled at 10-12° C. Will keep well for a year or two.
It is also highly recommended as an accompaniment to typical
Mediterranean cuisine, pasta and fresh vegetable dishes.

The Endrizzi family enterprise founded in 1885 by the brothers
Angelo and Francesco Endrici and run today by Paolo and Christine Endrici is, in fact, one of the few historical labels of Trentino.
The picturesque historical winery in its Habsburg style is located
on the green and sun-kissed Piana Rotaliana, near San Michele
all’Adige, in an area that has gone under the name of “Masetto”
from time immemorial. The vineyards surrounding the stately
company premises in a circular fashion have been cultivated for
years with biocompatible systems and offer a spectacular view
of the Monreale castle and the valley. Endrizzi’s “historical” labels
are a huge popular success: the Masetto Nero cuvèe made from
Cabernet, Merlot, Teroldego, and Lagrein; the Masetto Bianco is
the result of a blending Chardonnay, Sauvignon blanc, Riesling,
and Pinot blanc; the Masetto Dulcis a straw wine among the most

highly decorated in Italy. Endrizzi brut Riserva Pian Castello and
Endrizzi brut Rosè Pian Castello are considered among the best
wines today obtained with the metodo classico TrentoDOC. For
years now, Endrizzi’s passion for the Teroldego rotaliano varietal
is writ large in the production of four versions: the fresh Teroldego,
the noble Teroldego Riserva, the award-winning Teroldego Gran
Masetto, which is made from raisin-like partially dried the grapes,
and the rare Teroldego Gran Masetto Dulcis, a sweet nectar produced only in very small numbers.

Gaierhof is the name of the mountain overlooking the
town of Roveré della Luna in the north of Trentino and is
the label which Luigi Togn has been producing wine from
his own cellar since 1976, with a distribution both in italy
and abroad.Luigi Togn is the founder and head of the company. His daughters Romina, Martina and Valentina and
his son-in-law, the enologist, Goffredo Pasolli, assist him.
Since its founding, the company has specialized on the
production of excellent quality wines, in 0,75 L bottles:
white wines, red and rosé wines; 90% of the production

are DOC wines. The cellar has its own distribution network,
and supplies restaurants, bars, wine-bars and hotels.

The La-Vis Group is made up of seven wine-producing companies - 4 from Trentino, 2 from Tuscany and 1 from Alto Adige
-. It is one of the largest companies in the sector in Italy, with a
turnover of approximately 92 million euros in 2011/2012. The
parent company, the La Vis cooperative, was founded back in
1948, and has grown from its original 14 Members to around
1,300 today, tending to over 1,200 hectares of specialised vines.
Up until the mid-1990s, the cooperative instigated a major programme to improve the quality of the land it cultivated, through
cutting-edge agricultural and vine-growing projects (soil and

widening the range of La Vis Trentino wines and expanding as far
as Tuscany. These included Trento-based Cesarini Sforza Spumanti
(2001), Poggio Morino in Maremma (2002), Cembra cantina di
montagna – located in the Cembra Valley near Trento – (2003),
Casa Girelli from Trento and Villa Cafaggio from Panzano in Chianti
(2005). Finally, in 2012 it created Dürer-Weg (Dürer’s path), based
in Salorno in Südtirol. This ambitious production scheme, involving approximately 200 staff members, was rounded off with the
creation of Ethica SpA, the Group’s sales company, which currently
sells 40 million bottles of wine in over 45 different countries. The
La-Vis Group markets a wide variety of wines from Italy’s most

Il Pinot Grigio è giunto in Trentino attorno al 1875 nelle collezioni dell’Istituto di San Michele a/A, col nome di Ruländer. Dalla sua prima diffusione
nelle bonifiche tra Mezzocorona e Roveré della Luna degli anni ’50, alla
coltivazione a Lavis qualche km più a sud, il passo è stato breve. Le uve, utilizzate per la produzione di questo vino, provengo dai vigneti della collina
di Lavis-Pressano, gestiti secondo il Progetto Qualità. Questa esperienza,
ormai più che ventennale, nasce dalla volontà di rendere il vigneto sempre

Il Sauvignon blanc è coltivato in Valle di Cembra in alcune microaree
della Valle di Cembra, che La-Vis dedica al celebre genetista della vite italiano:
particolarmente vocate, nelle quali le elevate escursioni termiche giornaliere
professor Luigi Manzoni. La coltivazione secondo i criteri della biodinamica e le
permettono di preservare la labile componente aromatica. Dal colore giallo
caratteristiche del terreno franco-sabbioso originatosi da depositi morenici laterali,
paglierino con riflessi verdi, il vino presenta al naso, un carattere varietale con note
speziate che ricordano la foglia di ortica, il bosso, l’uva spina ed il pompelmo. Il condizionano fortemente le caratteristiche organolettiche del prodotto. Dal colore
giallo paglierino, il vino presenta un profumo fine e delicato dai sentori di mela,
gusto è fresco e sapido con un finale morbido e vellutato.

Il Lagrein, vitigno autoctono trentino, si è diffuso particolarmente sulle colline che
fanno da cornice alla Piana Rotaliana. La località Greggi, al centro di questa zona
collinare, è luogo ideale alla coltivazione di questa varietà. I terreni profondi, fertili,
particolarmente strutturati, originati da sedimenti a litologia prevalentemente
dolomitica, esaltano le caratteristiche organolettiche di questo vitigno.
Dal colore rosso granato carico, il Lagrein Greggi, presenta una sensazione olfattiva
caratterizzata da note di violetta, prugne mature e chiodi di garofano. Al palato, è
elegante, con tannini fitti e croccanti.

The Letrari winery was founded in 1976 by expert enologist
Leonello Letrari and his wife Maria Vittoria, however the
Letrari family dates back to 1647 and has been making wine for
centuries. Leonello was born on the family estate in Borgetto
all’Adige, a locality that is on what was once the frontier between
the Austro-Hungarian Empire and the Italian Kingdom. Today,
Borgetto al Adige sits between the modern regions of Veneto and
Trentino-Alto-Adige. The enthusiasm for fine wine production
has been passed down from Leonello and Maria Vittoria to
their daughter Lucia. Lucia graduated from the prestigious San
Michele Al Adige Institute of Agriculture and Enology in 1987,
and now successfully manages the family winery with the same

skill and passion as her parents. The Letrari winery is very much
married to its location’s distinctive terroir and the Vallagarina’s
microclimate - an environment influenced by the bordering river
Adige and the warm breeze that blows in from Lake Garda every
afternoon, known in Italian as “L’Ora” meaning the hour. This
wind gently lifts from the lake and travels up the valley every
afternoon at 3:00pm precisely. It aerates the grapes and the vines
in the summer, the heat and dry wind affect the sugar concentration in the grapes. Letrari Vini produces 25 different varieties
of wine, each deeply rooted to the territory and with distinctive
characteristics. The temperate climate has also made it possible
for the firm to produce a limited quantity of extra-virgin olive oil.

Growing olives this far north makes for particularly fruity oil with
a delicate aroma. The Letrari winery has 23 hectares of vineyards
located in various areas around Vallagrina. Its headquarters are
in the modern winery at Borgo Sacco in Rovereto. There is a beautiful tasting room which is open to the public by appointment.
The property, surrounded by a luxuriant garden, is spectacular.

Maso Martis winery was established in 1990 with Antonio and
Roberta Stelzer. Ever since the beginning we have dedicated our
activity almost exclusively to the production of classic method
sparkling wine. The TRENTODOC is the wine that we love, in which
we believe, and on which we invest our energies.It’s a mission that
we keep alive, and pursue with love and constancy.
Maso Martis is located in Martignano, at the foot of Mount Calisio
(also called Mount Argentario) sorrounding Trento, 450 m above sea
level: a mountain terrain that was cultivated already from the end of
the XIX century, well exposed and caressed by the mountain breeze.
Since 1986, we have been cultivating 29,6 acres of vineyards on calcareous soil, rich of the typical Trentino porphyry redstone. We have

a limited production: 60,000 bottles a year, out of which 45,000 are
dedicated to TRENTODOC. Our wines are made from our own grapes.
The harvest on the farm is hand made and it still represents a village
festival. Our idea of safeguarding the genuine product and our environment, has led us towards organic farming. For us it is important
that every bottle reflects the year in which it was produced and that
the attention we put to the vineyard health is the same as the protection of our everyday living environment. The focused attention on
details is the result of a valuable team work, where the presence of
Andrea Cristelloni in the vineyard and Matteo Ferrari in the winery is
an integral part of our exciting project. Our signature is therefore a
concrete reality that symbolises every single bottle of Maso Martis.

our vines with the purpose of obtaining elegant as well as structured wines through rigorous quality inspections involved in all the
production phases - from the vineyard to the bottle. Moreover our
winery has always been aware of the necessity of promoting the
production of wines unique to the region. With our Blanc de Sers
we have adhered to a project of recovering of ancient grape varieties at risk of extinction in our region. It is a white cuvée obtained
from very old grape varieties: vanderbara, veltliner rosso, vernaza

Established in 1931, the Cantina Rotaliana of Mezzolombardo
is a highly esteemed company, both for its excellent products and
also for the important economic and social role that it plays in the
heart of the Campo Rotaliano area, where it is located. Ever since
its establishment, this company has been able to grow, change
and improve thanks to a successful combination of innovation
and tradition. The winery has kept the traditional style, linked
to the experience of over three hundred wine growers, who jealously guard the art of vine-growing, and it has supported this
with high-tech equipment and a new and efficient production
process. The blend of tradition and innovation has produced
excellent results, the winery has hit the mark, and today inspires
the business culture of the winery; a culture that attaches great
value to the origins and history of the wine, but which at the same

time looks to the future. Due to this dynamic and innovative spirit,
and in order to satisfy its stakeholders and customers, since the
2002 vintage the winery’s production activity was moved from
the historic buildings in downtown Mezzolombardo and set up in
the brand new headquarters located at the entrance of the town.
This new head-office is a prestigious architectural development
and it is equipped with the very latest equipment that makes it
capable of rapidly meeting the demand of an increasingly expanding and competitive international market. The perfect balance
between innovation and tradition is not the only reason for the
success of the Cantina Rotaliana of Mezzolombardo. In fact, there
is no doubt that another major factor is its lovely, favourable position in the heart of Piana Rotaliana, a land specifically suited to the
cultivation of some of the best wines in Trentino. This area, defined

TRENTODOC, leading producer of
“METODO CLASSICO” in Italy,
the sparkling wines of the mountains in figures
Although the Trentodoc trademark was established in 2007, it is already a leading
national name in the high quality “Metodo Classico” sparkling wine sector. Behind
the “remuage” symbol, there is the strength of a sparkling wine association, which
has a great tradition, deep-rooted in the history of Trentino and the special features
of this region. Every day, its 39 producers are fully committed to pursuing excellence, quality, taste and flavours in order to put the freshness and genuineness of the
mountains of Trentino in our glass. They are also good at “figures” and therefore Trentodoc is a leader in the “Metodo Classico” sector, with 40% of national production
and a strong position in the distribution and export sector.
Thanks to these figures, we can learn more about Trentodoc, its size, and its propensity to produce “for export” and represent the Trentino region in the world as a
true ambassador of excellence. It is therefore significant how the sales of Trentino
sparkling wine amount to 5% within the borders of the region, 85% in Italy (mainly
Lombardy, Veneto, Lazio and Emilia) and 10% abroad, of which 4% goes to EU
countries (mainly Germany, France, Belgium and the Netherlands) and 6% to nonEU countries (USA, Japan, Russia and Switzerland).
In 2011, the Trento Chamber of Commerce Tasting Commission deemed 58,844 hectolitres suitable, the equivalent of 8,005,800 bottles, of which about 90% was white,
4% “Riserva” and 6% rosè. The average size of Trentino farms is very small, with an
average surface area of 1.20 hectares. About 69% of local farms have less than one
hectare dedicated to vine growing.
Today, the large-scale distribution sector is the most important sales channel in
terms of volume for domestic consumption of wine. Trentodoc is distributed as follows: 45% goes to large-scale retailers, 23% to restaurants, 20% to wholesalers,
11% to wine taverns and 1% is directly sold at wineries. Sparkling wine producers of
Trento confirm their leading position in the large-scale retail sector, with their “Metodo Classico” products, mainly due to their distribution and availability at winery
sales outlets in the north of Italy. We can therefore say that Trentodoc is the most
popular “Metodo Classico” in Italy. In this context, local production reinforces its market share, maintaining a high quality product and investing considerable resources
in innovating facilities and promoting products.
